Lagmania is a popular national dish, which is mistakenly considered to be just a soup. In fact, it is both the first and second course! Lagman can be cooked with a large amount of broth or, on the contrary, contain a minimum amount of broth. This second variant is often cooked by the Uyghurs and is called «dry lagman». Lagman is cooked mainly from lamb, vegetables, and hand-pulled noodles made in-house. This is a finger-licking dish, providing a special combination of ingredients that displays real fireworks of taste.
